July, August
Pistachio is a woody plant belonging to the Anacardiaceae family. It belongs to the group of nut fruits, alongside peanuts, almonds, hazelnuts, walnuts, and chestnuts. Archaeological findings indicate that pistachio trees were cultivated over 9,000 years ago, highlighting their economic significance. Pistachio trees reach full production only 20 years after planting. The seeds are dried and shelled, best kept in their shells until consumption. When stored in a cool, dry, and ventilated place, they remain fresh for about 4 weeks. Roasting opens the shell naturally, making the seeds edible and delicious. Shelled roasted pistachios are perishable due to their high fat content, so they should be roasted just before consumption or use. Pistachios are rich in healthy fats, proteins, and carbohydrates, and due to their fiber content, they support digestion and overall digestive health. Just a handful provides a feeling of satiety while having fewer calories than most other nuts, making them ideal for maintaining a healthy weight.
The kernel has a distinctive, pleasant flavor. Its authentic taste works equally well in both sweet and savory dishes.
The drupe is 1–2 cm long and about 2 cm wide, enclosed in a beige shell that slightly splits as the fruit ripens. Inside is an edible greenish seed. The pistachio's characteristic green color comes from lutein and zeaxanthin, which are important for vision. Nutritionally, pistachios contain 50% fatty oil, 20% protein, 20% carbohydrates, 2% fiber, and minerals including potassium, calcium, magnesium, and iron.

Planting is done from late October to mid-April, avoiding periods of frost and drought.
Trim the roots, then the branches into 3 to 4 rings. At the beginning of March, cut the seedlings to a height of 80 - 120 cm.
Before planting, soak the plant in water for at least 2 - 3 hours.
Dig a hole, in the previously prepared soil, measuring 60 x 60 x 50 cm for the soil (40 x 40 x 40 cm) so that the roots and part of the stem are well placed, taking care that the grafting point is outside the soil.
Place the plant in the hole and cover it with dry soil, gently press it down so that it gets well between the roots.
Fertilizer and seedling roots must not be in direct contact.

Pour with 20-30 liters of water. During periods of drought in the first year of planting, it is necessary to water young seedlings more often.
Containerized seedlings can be planted throughout the year.
